Crappie: I guarantee that's good eatin!

Folks, you get a couple Texans together, fishin' on a pond, and I guarantee the thing they'll be talking about as they head to shore is cookin' what's on the stringer.

I've been out on the lake with Seth Vanover, and here are a couple of our favorite crappie recipes:

Seth's Favorite Grilled Crappie

  • Butter
  • Crappie fillets
  • Favorite seasoning
  • Foil

Preheat the grill.  Place the crappie fillets on the foil, drizzle with butter, and sprinkle with seasoning.  Make the foil into a pouch.  Place on the grill for seven minutes.  Do not turn!  Dig in!
Note:  Do not overcook.  The fish will get rubbery.

Luke's Favorite Deep Fried Crappie

  • Buttermilk
  • Louisiana Hot Sauce
  • Cornmeal
  • Flour

Preheat the deep fryer or skillet.  Mix hot sauce with buttermilk.  Mix half flour and half cornmeal.  Dip fillets in buttermilk.  Dredge in cornmeal/flour mixture.  Fry.
