Dodge City micro-brewery expected to open in June

The first micro-brewery in Dodge City and one of the only ones in southwest Kansas is pushing for a June opening.

As The Dodge City Globe reports, Dodge City Brewing  is currently under construction near Third Avenue and Spruce Street.

Once open, the brewery will offer more than 30 recipes and currently has six featured beers including Space Cowboy, Demon Red Ale, Pete’s Brown Ale, Uncle Johnny’s Cream Ale, Samurai Cowboy and Maurice Wit.

Co-owner Larry Cook told the Dodge City Globe that he and his wife Shari also learned to make world-class, brick oven pizza after attending Goodfella’s Pizza School of New York.

Cook said they really wanted to locate the brewery near Boot Hill Museum, which also put them close to the Boot Hill Distillery, which opened last year. He said some of the recipes the brewery uses will be with barrel aging from the distillery.

The Cooks plan to open the brewery in early June.
