Talk about root vegetables, and most people zone in on the obvious suspects: potatoes, carrots, and beets. So on this week’s edition of Growing on the High Plains, we’ll talk about the “B-sides” of the root veggie world: parsnips, turnips, rutabagas, and celeriac (celery root). As long as your soil is primed, you’ll pull up some delicious deep-cuts that aren’t as common to the gardener’s table.
